Insalata d'Inverno
(Winter Salad)
Serves: 4
Until recently, there were few fresh greens for salad to be found during winter months in the mountains of Italy. Oranges, olives, and onions were typical winter offerings for salad still popular today.
Ingredients:
- 4 large oranges
- 1 small red onion, cut in half and thinly sliced
- Kosher salt and freshly ground black pepper (to taste)
- Extra-virgin olive oil (to taste)
- 1/4 cup Oil-cured black olives, left whole or cut into thin slivers
Instructions:
Peel the oranges with a sharp
knife. Be sure to remove the white
pith. Cut the oranges in half
lengthwise and cut in half
crosswise; cut sections into 1/4
inch slices. Place oranges into a
small bowl and set aside.
Sprinkle sliced onions with salt
and set aside for 10 minutes. Just
prior to serving, season and
drizzle olive oil over oranges and
onions in separate bowls. Arrange
oranges on a serving plate and top
with onions, and garnish with black
olives.
